– Freshly ground and pre-ground —

However, freshly ground coffee is often much richer than the aroma and flavor of pre-ground coffee. You will find that the aroma is most abundant when it is just ground into powder, and after a while, the aroma will dissipate.

After grinding into powder, the loss of gas and aroma substances in the body is greatly accelerated, which means that the taste period is shortened correspondingly, and the coffee aroma is not so rich, so that it tastes a little bland.

This is the result of the convenience of hanging ear coffee at the expense of some coffee flavor. For coffee made by hand, it is recommended that you have a bean grinder that grinds the beans as they are made, so as to maximize the flavor of the coffee.

The filter bag of hanging ear coffee is generally made of non-woven material. Its structure is similar to the metal filter screen introduced before, which is composed of a layer of coarse mesh non-woven fabric and a layer of fine non-woven fabric. Since it also has no guiding bone, its launching principle is also to filter out the coffee liquid through the surrounding pores, so, like the metal filter, the water drops faster when the water level is high, and slower when the water level is low.

Test the launching speed of the empty bag of the hanging ear filter bag. Fill the empty bag with water, which is 90ml. By 40 seconds, the water level had dropped to the bottom bulge, and it took two minutes for the bottom to drain completely.

Considering that there is coffee powder at the bottom of the actual brewing process, when the water level is high, the water will flow out from the holes around. If the coffee powder is deposited at the bottom, and there is no coffee powder around to act as a powder wall, then part of the water will flow down without sufficient extraction of coffee, so it will lead to the coffee hanging ear will be very weak and not enough flavor!

What does the amount of powder have to do with the concentration of coffee? This is where stability comes in. When it comes to making coffee by hand, many people have a certain amount of powder they are used to. For example, if you’re used to brewing 15 grams of ground coffee, brewing 10 or 20 grams won’t necessarily produce the same concentration. This involves the flow rate habit of water injection.

Under a certain proportion, 10g powder means less total water injection, and 20g powder means more total water injection. If the water flows at the usual speed, then 10g powder will be quickly filled with water, coffee will be weak; The 20g powder will take longer to fill with water and the coffee taste will be stronger.

The conventional specification of hanging ear coffee bag is 10g/ bag, which belongs to a kind of powder quantity is relatively small, and naturally it is easy to dilute.

The amount of water injected —

Generally speaking, electronic scales are rarely used for coffee. Most friends decide how much coffee to brew according to the size of the cup. If you choose a large cup, you will pour out more coffee, and the taste will naturally be weak.

Therefore, if you want to make coffee not so weak, you should follow the brewing ratio. It is recommended to inject 150-180ml water into the coffee with hanging ears. If you do not have an electronic scale, you can measure the water level range of 130-160ml according to the coffee cup you use. In the future, we will use this cup when we brew coffee with hanging ears. When the coffee liquid reaches 130ml to 160ml, we can remove the hanging ears coffee bag.

Special hanging ear coffee jugs can also be used. These jugs usually have a scale to fill the water to the desired amount and then fill the jug with all the water.

The water temperature is not enough —

This problem often occurs in the office scene, because the water temperature of the water dispenser is not up to the temperature of brewing coffee, so when brewing hanging ear coffee, the extraction efficiency is low, and the coffee will be weak.

Generally, the water temperature for brewing coffee is between 86 and 93 degrees Celsius. If it is really impossible to get such hot water, it is suggested to use a low cup to hold the hanging ear coffee bag, let the hot water soak the hanging ear bag, and extend the extraction time to make up for the insufficient extraction caused by low temperature, so that the final coffee will not be too weak.

Of course, if the water temperature is appropriate, it is not recommended to soak the extraction, because it is very easy to brew coffee bitterness.
